I just recently got a bread machine and it has been used twice…both loafs have been just alright when they come out, but then once they are cold it has gone fairly hard and it actually tastes relatively bitter. Help?
If you made a whole wheat loaf that has little fat or sweetener in it, the tannins in the wheat bran will taste bitter. It is an acquired taste to enjoy! It is also possible that whole wheat flour may have gone bad, in which case it may have a strong "off" or bitter taste. White flour can go bad, but rarely does, since it has little of the natural oils that are contained primarily in the wheat bran.
As for a recipe:
3 cups white flour
0.75 cup water
1 egg
1 teaspoon salt
1.5 teaspoons yeast
You may need to add another tablespoon or two of flour. About 5 minutes after you start your machine, check the doughball, if it is very tacky, add a tablespoon of flour and check again in another 5 minutes.

Oh, bread goes "hard" from one of two things: drying out, or going stale. Stale bread can be toasted, which re-"melts" some of the starch crystals and softens them. Dry bread is good for french toast, or crushed to coat chicken for frying, or fed to the animals.
